Anyone build a WW flat bar commuter?

The spirit of Grav-lo-cross. No but seriously, cyclocross and gravel go here!

I want to build something for gym/light grocery runs and riding with my kids. Something way less serious and uncomfortable than my road bike, maybe sturdy enough to get back into wheelies again.... but still light-ish and quick-ish if possible. I thought about a quick and dirty single speed build but I feel like that would be too limited. Curious to see what people have built.
