Monstercross Build help!

I'm in the process building up a 29er boost mountainbike with rigid forks into a monstercross bike.
Primary focus will be beach racing next winter and gravel racing. Because of the beach racing i went for a one bike for all solution (hence the 29er mountainbike instead of a dedicated gravel bike).

First thougth was building it up with mullet shimano DI2 groupset 2nd hand (11 speed shifters and xt mtb derailleur) buth sram 12 speed mini groups would be around the same cost new (and i already have postmount sram force calipers).
The problem i am facing are the boost Wheels (i have an XD body and a HG body) , i can only find wheels with XD body so i am limited to mtb cassettes because i can't mount sram road cassettes on the XD body.
Could i use shimano 12 speed cassettes on a sram Xplr setup?
