Can't seem to find any pre-fab kits for my gravel frame - has anyone used bulk tape and cut strips? Any success stories? Things to avoid?

I've done a few MTB and road bikes with 3M helicopter tape from eBay. No real tricks to it apart from avoiding complicated curves

I took 3m “helicopter tape” and cut protection around the BB in case of dropped chain and under it to seal all the holes for mechanical routing cables. That’s two years now and hold perfectly despite being a place with many curves (the trick is not to stretch it). I did protect also the carbon shell of my Comete ultimate shoes.

If you want to protect frame tubes that would be super easy.
