You can target sub 7.5kg and have a perfectly functional gravel bike to hit some fairly gnarly gravel races (at least that's what I do with mine). At least sub 8kg should be easily achievable.

That's very impressive! Do you mind sharing some details about the build? Looking at Canyon's website SRAM 1x rival e-Tap carbon version has stated weight of 9.32kg (I think Canyon provides weights for medium size as all my Canyon bikes are lighter than stated weight).
Let's say I put carbon wheels on it to save around 500-600g from the stock wheelset (which has stated weight of 2062g). Force vs Rival is like 200g difference if I google correctly. That's still far into 8.x territory even in smaller sizes. What have you done to shave that much weight?

Had a replacement frameset under warranty so got a chance to weigh it.
Frame including mech hanger and seat post binder - 1186g
Fork full lengh uncut - 438g

120mm Rear /150mm Front travel, 10-46 15sp cassette, (10-11-12-13-14-15-16-17-19-21-24-28-33-39-46) wireless. Two stage fork, lockable at 110mm axle to crow shortened.
