How do the pro mechanics deal with centerlock rotor spacing issues?

If the rotors are at the same spacing, or if you shim them so they match, then you don't have to do anything with the brakes when you swap wheels.

I've done the opposite, actually, when I've done two wheelsets for one bike. I've moved the rotors (and cassette) when I change wheels. Takes longer than not switching rotors but a lot less than recentering calipers or reseating tubeless tires.
