Just why Shimano would try to force the road-12-only freehub bodies down everyone's throats is beyond me; they should abandon that idea immediately or they will sell fewer wheels.
As for the 11 speed 11-40/42/46 Shimano cassettes, the 11-40 is just about okay (except for 21-24), 11-42 is considerably worse (esp. 24-28), and 11-46 also has a huge gap into low gear (37-46). They may be fine if you have no interest in maintaining a reasonably even cadence; given that's usually impossible when mountsin biking, gaps aren't so much of an issue there.
I believe so. 10T is too small to fit on HG hubs I believe. I don't see why 10-45 wouldn't be doable in 2x, I'm enjoying 11-40 on my 2*11 GRX and some people claim to run 11-46 double without too many issues. I'm hopeful it won't be a disaster groupset. Just needs new gen di2 for me.

GRX shifters are pretty much rebranded mechanical levers anyway. GRX 12sp is much more comparable to Shimano's 12sp MTB groupsets. They are all mechanical, so it is not a huge surprise that GRX 12sp is mechanical, and might be mechanical only for some time. (Yes I know about the e-bike XT Di2 groupset, no nitpicking please
)

Maybe or maybe not. The current 11-34 12-speed cassette has ratios more suitable for road than gravel. Shimano will likely keep the existing 11-34 12-speed cassette for the faster gravel riders and make a new 11-36 with gravel ratios for the more casual and mortal riders.
