Are you talking about the future mechanical R7100? Or R7100 DI2 with 9011 DI2?

R7120, which has been leaked. I'm wondering if like SRAM, the derailleur doesn't matter, just the shifter itself.
^ That will depend on whether Shimano change the cable pull ratio for 12 (versus 11), something we don't know yet. I'm hoping it stays the same (for another hack) but who knows yet outside Shimano HQ?

Any long term reviews of 105 Di2? Pretty tempting when you can get a mini group for around $800 USD. Just curious what the real world experiences are.

Form factor of the shifter looks unchanged from 11sp. Which means you could buy right shifter, RD, chain, and cassette and be good to go.

I believe they're ST-R7025 lever blades

Shimano already has 12spd pull ratios and with 12spd GRX using MTB cassettes, it would make an awful lot of sense for everything to standardize on it. It would allow for configs like flat-bar gravel builds.
