What kind of wheels are you using? FWIW, if it a DT swiss type hub, it's pretty dang easy to pluck and plop the cassette from one wheel to the next. I use a Rotor 12sp 11-39 for both. I have 2 sets of wheels (both used on Rival etap XPLR 1x) - Cadex AR 35 for gravel riding (with 10-44 cassette) and Cadex 65 for road riding (I have replaced the 10-44 cassette with the 10-36 one on those). Other than b-screw, I didn't have to do anything else with this change. XPLR wont work 2x. You need Wide, which might work with the 11-39 cassette. If you look in the comments here, it looks like the the Wide RD doesn't work well.

That'd lower your top pedaling speed ~5kph, which at 60kph very acceptable unless you've got an extremely long -2% decent. You're basically lowering everything down a gear.

1x 42 x 10-44 should give you about the same low gearing as the 50/34 x 10-36, minus a couple of high-speed gears you likely don't need. 2x12 speed is kind of silly anyway.

The Cadex is a toolfree system also, so if you don't mind a quick second of work while swapping wheelsets, you can save $200 on cassettes or have options sharing them.

I was looking at doing the same setup in the back but I think a 44t will be plenty for me so I'll use a XPLR cassette. If you go XPLR you'll need to buy a long derailleuer cage from what I know because XPLR only works up to a 44t. Luckily Garbaruk does sell that stuff for a great price, I just don't have any expericene with it.

I'm running a 11-46. I'm thinking tune would be dicey for a 10/11-48 as the chain would likely skip in the 10/11 because of b-tension. I've been running a Rival AXS XPLR on my 1* MTB (Kingdom Vendetta) with X01 10-50 cassette ok so far. It's a hardtail so no chain growth to manage (so may be different on a full Susser) and not sure the clutch is as strong but it's worked ok so far.
FWIW I've confirmed with Garbaruk that AXS XPLR derailleurs are compatible with the road AXS cage and pulleys. May be picking that up along with their 10-48 or 10-50 cassette in the near future.
The 10-44 range with a 40t chainring is good enough for me most of the time, but sometimes I'd like a high top end speed, especially on the road. I'd hate to give up the low end by switching to a bigger chainring, though, so a 42 or 44t chainring with the Garbaruk solution is ideal for me.
