Such a dilemma between choosing a size 56 or 58 S works Tarmac SL7.
I am 1,87 m tall, inseam 907mm. Always have riden 56 frames in Specialized (Allez Sprint, Aethos, S works SL6), never 58. Only the Canyon Ultimate in size L and the Supersix evo in 56 i have had felt a bit ‘larger’ then the specialized bikes. I am a bit afraid that the climbing performance will be different on a 58 vs 56. On the flats, i sometimes think a 58 would better fit me as I am not the most flexible person on planet earth.
This was my setup (after retul) on a SL6 back in 2021
What would you guys do? Pro’s and cons

Pros of 58: you could likely slam your stem.
Cons: it's heavier, and you'd have to fiddle around to get the same fit.

I'm 1.92m and was on the fence between the 61cm and 58cm. I ending up going with the 58cm and am very glad I did. I agree with LanceLegStrong, if the SL6 felt good, and from the pictures the position looks pretty good, why change? It is fairly easy to work on your flexibility, not so easy to swap out a frame. For what it's worth I'm 6'1" / 1.85M and was trying to decide between 56 and 58, and ended up going with a 58. I slammed the stem and it fits exacly as I would want it. It's a full factory SRAM build and the weight with Shimano 105 pedals (will upgrade eventually!), Wahoo Bolt & mount + two bottle cages + rear light came to 16.36lbs / 7.42kg.

Ah gotcha. Sometimes it is off from actual inventory, but that's how I've sourced my rapide bars. Result is a similar saddle height but I have a slammed 120mm stem on a size 61.
I'm going 58cm eventually on a 130mm stem with some spacers under I think.
Sounds crazy at first for 1,95cm tall, but with my inseam I think it makes sense. Plus long stems look nice...\
As for my recommendation: get a 56cm bike that has a shorter reach and taller stack. Supersix seems to be a good option with it being ~20mm taller stack and ~8mm shorter reach. This will let you lose 20mm of spacers and get a longer stem. The 58cm SL7 will feel bigger than the 56 supersix or ultimate

@Asetek custom bike inspired by the Wilier Astana edition 2 years ago... i just could not get used to the black stripe on the seattube and the guy put the S-works logo a bit more towards the front.
