Next thing they need to correct is crank length.

What torque are people using on the top cap/headset preload? The manual just says to do it right basically. I typically go around 1-2 Nm.
My super record wireless build is almost done now that the hydraulics are installed and bled. Hose routing was tricky since you do it opposite direction for Campy. Just need to put the chain and program the shifters.

In my experience you can't really use a torque spec. You just have to work with it until the play in the headset is gone. I 2nd your feeling that 15Nm is quite high. I initially ran mine at 11Nm front/13Nm rear, but now run them at 15Nm. Some ppl always seem to know better than the manufacturer.
Whenever I ride a DB bike I carry a hex key in addition to my normal multi tool just for the thru axle. If needed I can use my foot to undo the thru axle with the hex key, which is not possible with a multi tool. Yes it's extra weight, but that's the price for using DB.
