Is there 48x31 or 52x33 cranksets on market?
I know only Shimano GRX 48x31. Maybe there other brands that made something like this?

I have a 48/32 SL-K set up with Shimano GRX 11 speed mechanical on my cyclocross bike.

However, I'm not sure if it can be spec-ed with a 31. I would think shifting from 33 to 52 would not be very smooth and from 52 to 33 greater risk of chain drop?

For optimal shifting experience, you probably want Shimano's crankset, i.e., the GRX crankset.
Others mention Rotor's and I have one on one of my bikes... rotor's non-drive side bolt is a nightmare to work with and it can come loose easily. They should reverse the thread direction so it won't come loose.

I recently completed an sworks crux build and went with a rotor aldhu carbon crankset (longer axle) with 48-31 rotor chainrings and GRX Di2 12 speed FD and RD. No issues with shifting at all.
