T*red

They have lots of bikes on facebook to. I would for sure buy T*red if i bought steel or even Ti.
They have several models of steel/ Ti. Most bikes available are both in steel and Ti versions.
Off topic, but their alu bike seem like a monster, probably super stiff.

De Rosa Corum (available in disc or rim); also Bixxis (a literal offspring of De Rosa) seem to provide pretty good value on today's market.
If money was no question, Pegoretti.
Otherwise Cicli Barco.

Stelbel is a great choice as is Tommasini. I have heard horror stories with Battaglin. Bertoletti will do a nice steel bike for you as well.
All make bikes that are disc brake compatable, and can have compelty "hidden" cables.
Also, what do you consider "modern" and what are you looking for in terms of "being ridden fast"? Stiff?
