So, I am looking for a new destination to spend a week, or two in spring, escaping Sweden. Due to reasons it cant be Gran Canaria, which would be my go-to otherwise.

Any good options for something reasonably warm so my SA can enjoy some sun and I can enjoy some mountains?

Imo you can't beat Mallorca although weather hasn't looked the best over the last few years around Spring..

+1 for Mallorca in spring.

We have been in Greece, Sicily, Sardegna, etc. this spring/early summer. There are beautiful regions everywhere but i would not do any cycling on most of those roads.

Weather-wise you'd be looking at 25 degrees on Tenerife or 10 degrees on Mallorca if you're unlucky - so not the best destination if your SO wants to get a tan going.

Maybe have a look at Cyprus.
Friendly people, good food, mountains, decent road surfaces, plenty of routes and quiet roads (out of the towns). A similar flight time from Northern Europe when compared to the Canary islands.
I don't think it would be quite as warm, especially up in the mountains, but certainly better weather than Sweden. Provided you avoid Easter, it would still be off season so you may be able to get a good price on accommodation.
It's not as developed/popular as the classic Spanish destinations which can be both a plus and a minus, but it there is cyclotourism. There are visiting and local cyclists, as well as bike hire places and bike shops.
With Mount Olympus, as far as I know, it's the only place in Europe where you can cycle (from sea level up to 2000m) and see people swimming in the sea and skiing all on the same day.

Probably depends on what type of distractions your SA will enjoy.

Pool/sun/beach probably Mallorca.
Cafes/shopping/culture probably Girona.

I've done both successfully with my partner. Think she preferred Girona as she likes to go for a coffee, wander around the shops - not just sunbathe.

I have had the same thought many times. I always seem to find GC the best option. But if that is out, I've thought about the islands outside of Portugal in the Atlantic. Madeira and the Azores. I've never been on any of them. But when googling "Madeira cycling climbs" there seem to be a lot of options. And Madeira is a very beautyful island, I've heard. So there is supposed to be a lot to do, and a lot of places to go for SO, or just enjoy nature.

My brother in law went to Madeira recently and I asked about the road cycling possibilities there.
It's probably not one of the better options.
Roads not in very good condition (understatement), super steep.
He saw basically no road cyclists.
