Technically you can but you should research the total cost of hub, spokes, build. There are a number of good disc brake wheels that are reasonably priced. Check the wheel forum for farsports or light bicycle.
One problem may be the front wheel where 16 or 20 spoke are common on rim brake. Might not be enough for disc brake forces.

Reynolds 46 rim spoke count look to be 16 front and 20 rear according to this:

You'll struggle to find disc brake hubs with that low a spoke count, most disc wheels are at least 24/24 spokes.
Also the wheels will look strange with a brake track.
I'd just accept that the demand isn't there now for rim brake wheels and sell them for less than you were hoping for.
