That brake cable adapter underneath the stem, how high is that?
I guess that height is added on top of the stack number?

Well, under 7kg wouldn't be much of a problem, but how much weigh that frame anyway? It's seems pretty much, because you already have some ww parts, or thereabouts (tubes, skewers, pretty light tires, saddle isn't heavy too ...)

Thinking of either Alpitude Gardena, Berk Lupina, Berk Dila or Selle Italia SLR boost carbonio.
Must be pretty heavy, my guess is 1100g. Also the handlebar isn´t actually lightweight at 380g, propably even more. Then there is the crankset, should be 620g with chainrings..
the wheels are 1500g.

Here are a couple of suggestions:
- try a Recon cassette, a steel cassette weighs roughly 200g and will save you about 60g
- Dura Ace pedals will save you about 18g (or you could swap to speedplay and get ti-spindles and cut 100g, but Shimano pedals are better IMO)
- carbon works bottle cages are about 8g each
- you could try a Gelu saddle or the new selle italia slr boost tekno superflow which looks cool
- tubular wheels really are a pain in the ass to live with, especially if you use glue instead of tape. There are a few light clinchers on the market in the 1200g range including Tune TLO, Winspace Hypers, Farsports Fender and so on.

Could be a little more, though. The Frame.
My "stock" bike, with all Ultegra 6800 (full crankset approx. 700g), 1500g Mavic wheels, 120g skewers, 160g tubes and some 70g more in tires and 100g in pedals was approx. 100g lighter than yours. So, nothing is especially heavy on your bike, except that handlebars. Stem too, maybe. And maybe some other thing, not mentioned
Luckily, you want just sub 7kg (like me, initially, but things got out of hands ) which, as I said alredy, will not be problem.

should be 1496g without skewers as stated by Campagnolo. I have never weighed them.
well, I hope it stays that way. next thing will be the saddle for me. I have pretty much settled on getting the Alpitude Gardena.
And next year sometimes I will get a new set of wheels, most likely some Campagnolo Bora Ultra 50 tubulars. Than I should have reached (and surpassed) my goal of a sub-7kg Dogma.
Before you go down the tubular route, (and I’ve only recently moved away from them so I think they are a practical proposition) why not give some lighter tyres and a tubeless set up a try?
I’ve got Veloflex Corsa Race on my Boras and they have been great so far. Would probably get you those 50g without spending a fortune so not much lost if you go tubular afterwards.

It is now 7.1 kg. Upgraded to Xpedo TI Sl pedals, Alpitude Gardena saddle and Tune bottle cages.
Not really shure about the tubuluars anymore.. I think I might just keep the Wto wheels. After all they are the last rim brake wheelset that Campagnolo made, so in theory they should be the best. Time for some updates on my beloved F12.
I swapped out the cockpit for a shorter, narrower one.
The bike is now spot on at 7,0 / 6,99 kg.
Maybe I will be changing the wheels in the near future for some Princeton Carbonworks Wake, that should bring the weight down some more and make the rig more aero.
