Congrats on a great build.
I have the same frameset so curious about actual rim clearance. Do you think DA/Ultegra calipers would clear a 28mm rim? Like the LB AR465. Although I assume 25mm tires would not fit on that rim (21 internal), so I'd have to use 23mm tires...
And if not, maybe with the EE brakes it could work?

Team BMC used 28mm wide with DA9100 calipers on their 9100 tubs. Personally I had issues clearing 25mm with 9000 calipers and had to do things like get EE brake shoes and those low-profile SwissStop pads. Never tried 9100. The main issue wasn't necessarily how wide the caliper opens but the brake shoe running into the fork.
EE calipers would definitely work.
