I have a 2016 Scott Spark RC
I love the bike but hate the vast array of cables.
Is there a decent 1 x 11 electric shift kit for MTB?

No, just Shimano XTR and it adds almost more cables ;)

Based on own experience, XTR Di2 is more than decent and very reliable.

You could go cable-free with SRAM stuff, just remember to charge batteries.

There's a chinese off brand wireless that I saw some influencers testing that can be set for 11 speed.

I have had Shimano Di2 XTR 11s since 2015 and it has never let me down. works great with mud and water. Weakest link is the shifter if you crash into it.
