Just had the local mechanic built up a 29er wheel set, using my existing Stan's 3.30ti hubs, DT swiss Revolution spokes, alloy nipples, Spank Vomax EVO 29er rims. Wheel weight was a respectable 1520 grams +/- 3 or 2%.

My question is, could I convert the rims to tubeless? What conversion method to use? Stans yellow tape? Ghetto duct tape? The rim bed has a different profile which is not flat, unlike stan's rims.

I'd try gorilla tape. It comes in the inch thick width, and it's what I use for most of my tubeless applications as a local mechanic. IME it seems to conform to the rim much better than the stans does, although it is a bit thicker and weighs more. With that wonky rim bed, I think the gorilla tape is your best bet.
